Wilted Salad Recipe

When I’m not hanging out updating my deeConstructed Facebook page, I’m cracking up at all the funny puppy photos that fill my personal news feed. One of my favorite ‘people’ to follow is this little Frenchie named Bubba Louie. Bubba has a ton of puppy pals and they chat all the time. The other day, Bubba started a photo chain so he could have all his friend’s faces in one spot. Oooh the ooey gooeyness of Frenchie & Boston mugs that filled that thread melted my heart!

One pup, Rocco, stood out to me and his mama sent me a friend request. Turns out, Katie and I have a lot in common. When I saw a pic of the dinner she was preparing, I mentioned the fare share posts and she sent me her favorite recipe saying “my parents have made it for a long time, and now I make it for my husband”.

Wilted Salad Recipe

Ingredients:
– 4 bacon strips, cut up
– 1/4 cup white vinegar
– 2 tablespoons water
– 4-6 green onions with tops, sliced
– 2 teaspoons sugar
– 1/4 teaspoon salt
– 1/4 teaspoon pepper
– 2 heads red and green leaf lettuce
– 10 cherry tomatoes, halved
– 1 hard-boiled egg, chopped

Directions:
In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, move to paper towels to drain. To the hot bacon grease, add the vinegar, water, sugar, salt and pepper, stirring until sugar is dissolved. Place lettuce, tomatoes, bacon pieces, and onion in a large salad bowl; immediately pour dressing over and toss lightly. Top with egg.

Katie says she sometimes microwaves the whole thing right before serving. Don’t you love making new friends who know how to cook? I do! Especially when we can share pictures and stories of our pups…doesn’t this make your heart smile?

Gah, I just can’t get enough of those shmooshed faces. Speaking of, my guy is hanging out in the spare room now that the bed is finally cleared off (and accessible). I’m heading back in there to finish up some cool corner book shelves I designed and put the finishing touches on the room since Sonne will be here on Sunday, er Son-day?

Easy Strawberry Angel Food Cake

It seems most of the nation is suffering from scorching temperatures this week so today’s recipe share is a perfect cool-down treat.

My friend Kelli from Pretty Painted Things sent in the following treat for ya’ll to try.

strawberry angel food cake Ingredients:

– 1 quart strawberries, cleaned, sliced (if berries are out of season or not very sweet sweeten with 1/4 cup sugar)
– 4 oz. cream cheese, softened
– 1/4 cup sugar
– 1 tsp. vanilla
– 1 angel food cake, torn into bite size pieces
– 3 cup sweetened whipped cream (softened Cool Whip will work fine)

Directions:

In a mixing bowl, whip softened cream cheese until smooth. Add sugar and vanilla and mix until completely incorporated. Fold in whipped cream (or Cool Whip). In bottom of serving bowl, begin layering, beginning with cake pieces, then whipped cream mixture, then strawberries. Continue until bowl is full, ending with the whipped cream layer. Chill before serving.

Kelli says this recipe is great if you’re watching your waistline since angel food cakes are naturally fat free. Many grocery story bakeries are now offering sugar-free cakes too. If you use reduced fat cream cheese and fat free Cool Whip then substitute Splenda or other non-sugar sweetener for the sugar, you can easily adapt the recipe to your specific dietary restriction.

Chicken & Mushroom Pasta

Since I spend most of my free time in the garage and not in the kitchen, I’m teaming up with some friends to feature their recipes. The ulterior motive here (besides diversifying the blog a bit) is that maybe I’ll start using my spatulas and wisks for more than just mixing paint too! Oh Dave can only dream…

First up, Eleni shares a yummy and easy chicken and pasta dish. For the best flavor, she recommends marinating the chicken overnight and then tossing it on the grill. Read on for the full recipe and cooking instructions (a printable is available at the end for safe keeping!)

Ingredients:
– 2 large boneless/skinless chicken breasts
– 1 box penne pasta
– 1 small container of feta cheese
– 1 pkg mushrooms (I used baby bella)
– 1/2 stick butter
– 1/2 cup olive oil

Marinade:
– 1 cup basalmic vinegar
– 1 T oil
– 1 T dried basil
– 1 T minced garlic

Mix all marinade ingredients and marinate overnight. While grilling chicken, boil pasta in slated water until al dente. Then drain. Next, saute mushrooms in small amount of olive oil until tender. Once chicken is done, cut into small slices.

Melt together butter and olive oil. Pour over pasta. Stir in mushrooms. Add chicken and container of feta. Season with salt and pepper. Serve immediately.
